One of the wine world’s most unique experiences is not comparing different grape varieties or wine regions, but tasting multiple vintages of the same wine. This is called a vertical tasting, which allows us to explore how a wine’s character is shaped by the weather, vintage conditions, harvest, and aging.
During such a tasting, you almost become a winemaker yourself—perceiving how much a wine can change in just a year, how it becomes rounder, deeper, or fresher. This experience is rare, as most wines are usually enjoyed only in their current vintage.
Now, however, you have the opportunity to embark on this special journey with two of Bibi Graetz’s wines: we are offering the Testamatta Bianco and the Casamatta Rosso across three consecutive vintages in an exclusive vertical package.
Testamatta Bianco Vertical Package (2021–2023) – (Link to website)
Testamatta Bianco is Bibi Graetz’s prestigious white wine, made from the ancient Ansonica grape grown on the terraced vineyards of Giglio Island. These plots—Serrone, Radice, Scopeto, and Olivello—root in granite soils and owe their unique character to the traditional “Alberello alla Gigliese” training system.
Harvested by hand, destemmed, and gently pressed, the grapes are fermented at low temperatures. 70% of the must matures in barrique barrels, while 30% is aged in stainless steel. Later, the wine rests on fine lees for 7 months with bâtonnage. This careful process results in a wine that is rich, complex, yet elegant.
- 2021: elegant, mineral-driven, with saline notes—like standing on the vineyard by the sea. White flowers, ripe citrus, and delicate sea salt.
- 2022: vibrant and fruity, with ripe peach and yellow pear, silky in body.
- 2023: fresh, crisp, with a clean finish, highlighting the variety’s natural brightness.

Casamatta Rosso Vertical Package (2021–2023) – (Link to website)
Casamatta Rosso is the “little Testamatta”—playful, lighthearted, yet expressive, made from 100% Sangiovese grown in the Vincigliata and Olmo vineyards near Fiesole. Fermentation takes place entirely in stainless steel to preserve freshness and fruit character, followed by 6 months of steel aging.
This style makes it truly lovable: pure, bursting with red berry fruit, juicy cherry and raspberry notes, gentle spiciness, and lively acidity. A genuine everyday Tuscan wine, perfect with pizza, tomato-based pasta, or grilled vegetables.
- 2021: rounder, smoother, with riper fruit.
- 2022: youthful, vibrant, with cherry and raspberry, supported by lively acidity.
- 2023: energetic, fresh, playful character that immediately captivates.
