A traditional sparkling wine made from Mauzac, the emblematic grape variety of the Limoux terroir. In spring, the young leaves of the vine have a white hue, hence the name "Blanquette" (blanc=white). Grape varieties: Mauzac (90%) / Chardonnay (5%) / Chenin (5%).
The vineyards are on clay-limestone soil, with north-facing plots to help the Mauzac and Chenin grapes retain their beautiful acidity. It's an easy-to-understand, fundamentally refreshing and fruity sparkling wine, beautifully complemented by yeasty notes from aging. It is characterized by fine, small, creamy bubbles, pleasant acidity, and an enjoyable flavor profile.
