The harvest takes place in late autumn, from late October to mid-November, when families and workers collectively gather the crop. The olives are pressed immediately, and then the freshly obtained oil rests for a few weeks in traditional terracotta vessels, where micro-oxidation and natural maturation impart a soft, harmonious texture and a complex, fruity-spicy character to the oil.
