This 100% Primitivo lot comes from the low-yielding vineyards of the "Saracena" cru, located on the border of the municipality of Maruggio, in the province of Taranto, in southern Puglia. The nearly 60-year-old vines are trained using the traditional "Alberello Pugliese" method, with a density of about 5,500 vines per hectare. The average yield of only 1 kg/vine ensures an extremely concentrated, exceptional quality raw material.

Harvest takes place by hand in early to mid-September. The bunches are placed in 5 kg wooden crates and then dried in a well-ventilated attic ("fruttaio") for about 10 days under controlled temperature and humidity. During appassimento, depending on the vintage, up to 40% water loss can occur, which significantly concentrates the color, extract content, and aroma complexity.

Before fermentation, the destemmed berries are not crushed, thus preserving the integrity of the skin, optimizing color and aroma extraction. Fermentation takes place in stainless steel tanks at 23–25 °C for 8–10 days. Regular remontage and delestage ensure gentle extraction, resulting in an elegant, fine-grained tannin structure. Malolactic fermentation is controlled, and the wine is then aged for 8 months in first and second-use French oak barriques, which adds complexity and structural depth.

Its alcohol content is 15%, which, thanks to the concentrated raw material and the effect of appassimento, harmoniously integrates with the wine's body.

Its color is deep garnet red. The aroma reveals dried fruits, exotic spices, white pepper, and chocolate. On the palate, it is a round, intense, layered wine with soft, elegant tannins, in which notes of vanilla, dried plum, coffee, and forest floor subtly unfold. The finish is long, balanced, and refined.

Excellent with game dishes, hearty meat courses, and hard cheeses. Enjoyed on its own, it also provides a complete experience as a meditative wine.
