Robert Mondavi 's Private Selection Cabernet Sauvignon from California is a wonderful, concentrated red wine cuvée made from Cabernet Sauvignon (90%) and other complementary red grape varieties (10%).

A deep ruby red with violet highlights shimmers in this wine in the glass. Aromatic notes of sweetly ripened berries - blackberry and blackcurrant - and juicy black cherries pamper the nose. Filigree nuances of toast, oak, fine vanilla and roasted hazelnuts are added. Very soft and full-bodied, this American red wine convinces the palate. The gentle tannins are very well structured and combine with the aromas of the nose and slightly smoky roasting aromas to form a wonderful overall picture. The fresh acidity gives this wine its lively character. The final comes with a good length.

Vinification

At optimum ripeness, the grapes are harvested in California and immediately brought to Robert Mondavi's wine cellar. There, the harvested material is first sorted, destemmed and gently ground. The mash is then fermented in stainless steel tanks at a controlled temperature of 29 degrees Celsius. After the fermentation process, the wine remains on the mash for 12 days. This wine undergoes complete biological acid degradation. This red wine is aged in stainless steel tanks as well as in wooden barrels. 50% of this wine rests for 14 months in French oak barrels.

This dry red wine from the USA is an excellent accompaniment to lamb chops with crunchy vegetables, roast beef in dark sauce, spicy ravioli or even matured hard cheese.
