Summer is the season of sparkling wines, and there's no other bubbly quite as light, refreshing, and lovable as Prosecco.
Although its official international day is August 13, in reality, it plays a starring role all summer long on terraces, in bars, and restaurants across the globe. It's high time to take a professional look at what makes this Italian sparkling wine so special, the regulations and traditions behind it, and how it positions itself on the global sparkling wine market.

What is Prosecco?

Prosecco is the iconic sparkling wine of Northeastern Italy, primarily produced in the Veneto and Friuli Venezia Giulia regions. Unlike Cava or Champagne, it is made using the tank method (Charmat method), resulting in a quicker, fresher, and fruitier style. The main grape variety is Glera, which gives the wine aromatic, floral, and apple-pear notes. Prosecco is an affordable yet elegant beverage, perfect for everyday enjoyment or special occasions.

Types and Styles

Prosecco is best known for its freshness and fruity style. Key characteristics include:

  • Glera: Green apple, pear, peach, white flowers – this defines the core character of Prosecco.

  • Verdiso, Bianchetta Trevigiana, Perera, Glera Lunga – These may appear in small amounts in blends, according to D.O.C./D.O.C.G. regulations.

The three main types of Prosecco based on production style:

  • Spumante – Fully sparkling, the most common form.

  • Frizzante – Lightly sparkling, simpler and easier style.

  • Tranquillo – Still wine with no bubbles, rarely encountered.

Rosé Prosecco – A New Dimension

Since 2020, Prosecco Rosé DOC has officially entered the market, made by blending Glera and Pinot Nero (Pinot Noir) grapes. With its pale pink hue, red berry notes (strawberry, raspberry), and classic Prosecco freshness, it offers a modern, trendy alternative – perfect for brunches, summer salads, or an afternoon refreshment.

Flavor Profiles by Sugar Level

Prosecco’s taste is light, fresh, fruity, and floral. Types differ by sugar content:

  • Brut – Dry, max 12 g/l sugar – elegant and refined.

  • Extra Dry – Slightly fruitier, 12–17 g/l – the most popular category.

  • Dry – Sweeter character, 17–32 g/l – fruitier and softer.

  • Demi-Sec – Less common, dessert-like.

Prosecco Classification – DOC and DOCG

Prosecco’s designation of origin (Denominazione di Origine Controllata – DOC) has two levels, based on geography and quality:

  1. Prosecco DOC

    • Covers the majority of production.

    • Encompasses a wide area (Veneto and Friuli Venezia Giulia).

    • Great value wines for everyday enjoyment.

  2. Prosecco Superiore DOCG

    • Limited to two prestigious zones: Conegliano Valdobbiadene Superiore DOCG and Asolo DOCG.

    • Grown on steep hillsides, harvested by hand, with low yields.

    • Wines are more complex, concentrated, and premium in quality.

    • The Cartizze subregion is especially noteworthy – the “Grand Cru” of Prosecco, known for its elegance and finesse.

Sustainability and Modern Technology

Prosecco producers are increasingly focusing on sustainability, organic farming, and reducing the effects of climate change. Many wineries operate with a lower carbon footprint, lighter bottles, and reduced water usage. The Charmat method is energy-efficient, enabling competitive prices without compromising quality.

Food Pairings

Prosecco is a true gastronomic wildcard – its freshness, lively acidity, and fine bubbles pair well with a wide variety of dishes:

  • Classic Italian cuisine – antipasti, prosciutto, mozzarella, seafood.

  • Asian dishes – sushi, Thai curries, Vietnamese spring rolls.

  • Vegetarian meals – grilled vegetables, cheeses, salads.

  • Rosé Prosecco – great with fruit, grilled meats, or even desserts.
