Rotari wines are primarily made from Chardonnay and Pinot Noir grapes, grown under the traditional Trentino pergola system and harvested by hand. The high-altitude vineyards, significant diurnal temperature variation, and mineral-rich soils all contribute to the wines’ freshness, acidity, and complexity.
The winery excels not only in winemaking technology but also in environmental consciousness. Built with bio-architectural principles, the facility is energy-efficient and blends harmoniously into the landscape – its iconic wave-shaped roof reflects the forms of nature.

FLAVIO – The Pinnacle of the Rotari Metodo Classico Style
Flavio represents the finest expression of Metodo Classico sparkling wines from the Rotari winery. Made exclusively from Chardonnay grapes, it originates from carefully selected vineyards in the Valle dell’Adige, located at altitudes between 250 and 800 meters above sea level. Hand-harvested fruit from limestone-clay soils delivers minerality, tension, and aromatic depth.
Part of the base wine is fermented in barrique, adding subtle oak notes without compromising freshness and acidity. The key to maturation lies in the specially designed bottle that facilitates fine yeast sedimentation, enabling a slow and controlled aging process. The result is a precisely structured, multi-layered sparkling wine that retains its refined character for years.
On the nose: Citrus fruits, white-fleshed stone fruits (peach, nectarine), with delicate hints of toasted hazelnuts and yeast.
On the palate: Dry, complex, finely creamy, with a long-lasting, silky perlage. Aromas of honey, toast, and a fine mineral finish supported by excellent acidity.
