Vinification

This wine clearly focuses on one grape variety, Chardonnay. Only the best grapes were used for this wonderfully elegant single-varietal wine from Domaine Laroche. In Burgundy, the vines that produce the grapes for this wine grow on soils of limestone and clay. Les Blanchots Grand Cru Chablis is an Old World wine in the best sense of the word, as this Frenchman exudes an extraordinary European charm that clearly underlines the success of Old World wines. When perfect physiological ripeness is assured, the grapes for Les Blanchots Grand Cru Chablis are harvested exclusively by hand without the aid of coarse and less selective grape harvesters. After the hand harvest, the grapes are immediately taken to the winery. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks and small wood at controlled temperatures. The vinification is followed by a few months of maturation on the fine lees before the wine is finally bottled.
